IL Villagio Expands Line With Three New Pecorino Cheeses

Elizabeth, NJ— IL Villaggio, known for its authentic Italian flavors, has introduced three new Pecorino cheeses: the classic Pecorino Toscano DOP and two truffle-infused varieties, Pecorino al Tartufo and Aged Pecorino al Tartufo Bianchetto. These additions join IL Villaggio’s popular Pecorino Romano and Pecorino Calabrese, showcasing the diverse flavors of Pecorino cheeses, which range from mild and creamy to bold and umami-rich.

Each cheese is produced by a family-owned dairy in Southern Tuscany using milk from sheep that graze freely along the coastal pastures of Follonica. All three cheeses are aged on Mount Amiata, a volcanic mountain where the breeze of the Tyrrhenian Sea meets the cool air of the Apennine Mountains—creating a unique microclimate that enhances flavor and texture.

Pecorino Toscano DOP

Aged for 30 days, this mild, savory cheese offers a smooth, pliable texture with notes of fresh grass and sweet milk. Versatile enough for cheese boards, salads, or snacking.

Pecorino al Tartufo (Boschetto al Tartufo)

A rich, creamy Pecorino aged for 30 days and studded with flakes of Tuscan White Truffle (Bianchetto). A luxurious addition to roasted vegetables, risotto, or scrambled eggs.

Aged Pecorino al Tartufo Bianchetto

A firm, bold cheese aged for a minimum of 120 days, delivering deep, savory notes and aromatic truffle intensity. Ideal for grating over pasta or serving on a cheese board.

 With the addition of these cheeses, IL Villaggio continues to offer retailers and foodservice partners high-quality, artisanal products that bring the spirit of Italy to everyday meals.

The new line will begin shipping in mid-May 2025.
