In Praise of Authenticity
For too long in America it seems that we were being presented with foods and beverages that were “watered down” alternatives to the authentic international flavors that they were based on. Fortunately, that trend has been slowly reversed as food and beverage creators have realized that the market currently responds to, and even demands, authenticity in the internationally known products they consume. The demand is being driven by the incredible melting pot of our nation which has welcomed so many diverse cultures from other parts of the world, and whom continue to cook and prepare the foods they are accustom to eating with the native ingredients that are so familiar.
The demand for authenticity is also prevalent in the Millennial generation I believe because of their love of travel and discovery of new places and interesting cultures. When they return home, they are eager to enjoy the flavors and recreate meals that made their experiences memorable.
This trend has certainly driven demand for internationally imported foods, as America has become of the most promising export markets for a majority of foreign nations. It has also had an impact on the formulations and flavors found in the new products coming to market, with many exotic ingredients being incorporated into the products to increase consumer intrigue and satisfy their demand for something different.
The end result is we are enjoying some great new foods and beverages that have expanded our food horizons in America, and I can only hope that it continues.
